Summer Avocado Soup

This soup is so refreshing, also it has enough calories to replace a small meal. Hope you will enjoy it.

Avocado Soup

Ingredients:

1 avocado

2 small white zucchini, diced (if with flowers, save them for decorating the soup)

1 small Meyer lemon, juiced

2 sprigs of dill, finely cut

10 mint leaves, finely cut

8 chives, finely cut

3 cups of filtered water

Salt and white pepper

Method:

  1. Process all the ingredients except flowers until smooth.
  2. Serve cold soup, and if possible decorate with zucchini flowers.
