Lentil and Hemp Patties


250g red lentils
2 cup hulled hemp seeds (260 g)
150 g spinach, frozen finely chopped
2 eggs
1/2 cup fresh mint, finely chopped
1/4 teaspoon cayenne pepper
Oil spray
Salt as desired


1. Soak lentils in the cold water, overnight or for a few hours. Rinse, drain and cook on the medium heat with 2-3 cups of water. Use two cups of water first and add more if needed. The lentils should loose their shape but not become a mash, and the water should be completely absorbed.

2. Thaw spinach in the sieve, do not press. Mix all the ingredients, and make wheels about 5cm in diameter and 2cm thick (approximately 85g)

3. Use a frying pan with a little oil in it and fry the wheels about 8 minutes on each side on low-medium heat covered with lid. Serve warm with your favourite salsa and/or yoghurt.
