Oyster Blade

Oyster Blade is a beef shoulder cut and it is tough due to its gristle. Interestingly, it is exactly what makes this meat unique and delicious. This cut needs a special cooking to present its incredible texture and flavour. Below recipe is as simple as it can get with very basic ingredients, however, the result is impressive. Also, it can be served with any side dish.

Twice Cooked Beef Rib

Serves 8. Cooking time 3.5 hours. Your time 20 minutes.

Ingredients:

8 Oyster Blade steaks

1 onion

1 tbsp minced garlic

2 tsp salt

1 tsp ground pepper

*casserole pot

Method:

  1. Slice the onion and divide into three parts.
  2. Mix salt, pepper and garlic. Rub all of this mixture into the steaks equally.
  3. Layout one part of sliced onion at the bottom of the pot, then alternated meat and onion layers twice.
  4. Cover with lid and cook on medium – high until well heated through, for about 10 minutes. Then slow cook for 3 hours making sure the meat is submerged in the liquid all the time.
  5. Carefully remove the meat into a serving dish. Quickly process all the juices into a smooth gravy and serve it with meat.
