When you have a nice steak, grilled fish or BBQ Chicken for dinner, or maybe even high protein Hemp Seed Falafel , then the next day it is not as exciting to warm up the left-overs. I have a solution for you, it is simple and yummy! All you need is a jar and medium-large size zucchini. If you have that jar with those delicious zucchini slices in your fridge, you will be looking forward to the next day treat not less than for a freshly made meat or vegetarian proteins.
Zucchini Slider
Ingredients:
To marinate zucchini:
1 medium-large zucchini
2 cups of boiled warm water
1/4 cup Apple Cider Vinegar
1 tsp table salt
1 tsp minced garlic
1 small chilli
A few fresh mint leaves
Filling:
Protein left-overs
Grilled capsicum or tomato slice
Mayonnaise, home-made.
Parsley for red meat or Coriander for all.
* 1.5 l jar
Method:
1. Slice the zucchini into slices about 5-7 mm thick, you should get about 12 slices. Place them in the jar. Cut the chilli and remove the seeds. Mix all the ingredients and fill up the jar. Put it into a fridge for at least three days.
2. Any meat leftovers, like BBQ chicken, steak, patties, falafels, veggie burgers can be used. Just use two slices of zucchini to build your mouth watering slider.
