Sundays are usually for relaxation and gatherings, making them the perfect day to share a delightful treat. This new cake recipe is ideal for such occasions. Quick and simple to prepare, it suits a lazy Sunday perfectly. Generously sized for sharing, it can be easily sliced to fit any need. Best of all, it’s not only delicious but also healthy!

Lazy Sunday Cake
Ingredients:
1 large ripe banana
1 egg
210g coconut yoghurt (any will do)
1 tsp Bicarbonate soda
1 tsp lemon juice or ACV
1 tsp vanilla extract
2 tbsp honey
1/4 cup white sesame seeds
1 cup Almond meal
1/4 cup rice flour
2 tbsp oat bran
1/2 cup rolled oats
1/4 cup whole hazelnuts
*20cm silicone form
Method:
- Mix soda and lemon juice, then combine all the wet ingredients.
- Mix all the dry ingredients except hazelnuts, then combine the two mixes.
- Transfer the dough into the silicone form. Decorate with hazelnuts lightly pressing them into the dough. Bake for 25 min at 180C/356F.
