Ginger Chicken Soup

This is soup is a perfect weight management meal. It is a low-calorie but a high nutritional value meal. Ginger Chicken soup is not only full of flavours, it contains very little carbohydrates and a good content of protein. Also, this soup is very easy to make!

Ginger Chicken Soup

Serves 6. Cooking time 2 hours. Your time 50 minutes.

Ingredients :

1 small chicken

For 1.5kg/3.3lb chicken:

3L/0.8gal filtered water

2 bay leaves

2 onions

2 cloves garlic, minced

40g/1.5oz fresh young ginger, finely grated

500g/1.1lb konjac rice

3 small or 5 baby carrots, thinly sliced

1 large carrot, peeled

1 bunch coriander

2 Roma (plum) tomatoes

Salt and pepper

Method:

  1. Cook the whole chicken in seasoned water with one peeled onion, two bay leaves and the large carrot for about 50 minutes. Remove the chicken and let it cool.
  2. Discard the skin, separate the meat into a dish. Remove the cooked onion from the pot and place all bones back into the pot and let it simmer for another 30 minutes.
  3. Remove the cooked carrot from the pot. Run the stock through the fine sieve into a clean pot and check the stock for seasoning. Add the chicken meat back to the pot.
  4. Dice the second onion. Skin, seed and dice the tomatoes. Add to the pot along with garlic, ginger, rinsed konjac rice, sliced baby carrots. Let it simmer for 20 minutes.
  5. In the meantime thoroughly wash and chop up the coriander. Add to soup at the end of cooking and switch off the heat.
